I think all our faithful readers know about our love for the green smoothie at breakfast, but some of you may be wondering, “What’s for lunch?” This is one of my favorite lunches and it is ready in a snap. It’s perfect for those on-the-run days which, let’s face it, seems like every day. I hope this delicious recipe, which is full of fiber, vitamins, minerals, and chlorophyll-rich kale becomes one of your lunch staples.  This recipe is as easy as throwing together a turkey sandwich and is much more satisfying and nutritious.

 

Dino Lentil Wraps

1/2 cup Red Lentils

1/2 cup Green Lentils

2 cups Water

Dinosaur Kale

Cucumbers (finely sliced)

Red Cabbage (finely chopped)

Romaine Lettuce (finely chopped)

Braggs Liquid Aminos (find it in the oil/vinegar aisle at Whole Foods)

Sriracha (you know, the red sauce that has the chicken on the front that you always see at restaurants; it’s in the condiment aisle of most grocery stores.)

Prepare Lentils:

Boil water and add lentils; give them a stir and lower heat. Cook over low to medium heat for 25-30 minutes; stir occasionally until desired texture (no crunchiness). You may have to add more liquid if it gets too thick; just throw in a bit more water.

Add 1-2 Tablespoons Bragg Liquid Aminos. You can save leftover lentils in the refrigerator and make these wraps for a quick lunch later in the week as well.

Wraps:

Spread 1/4-1/2 cup of lentils onto a piece of Dinosaur Kale
Add veggies of choice (I used thinly sliced cucumbers, chopped romaine lettuce, and chopped red cabbage, but use whatever you have on hand.)
Wrap stem side in first and cut in half.

Dipping Sauce:  I mixed 2 parts Braggs Liquid Aminos to 1 part Sriracha. Depending on your taste buds and your tolerance for spicy, you may need to add more or less Sriracha.

Side note: Depending on the firmness of the Dinosaur Kale, you may need toothpicks and/or a fork. Also, this works well with Chard or even a big piece of Romaine.
